Broiled Skirt Steak with Horseradish Dipping Sauce


I'm definitely not a grill-master so this is my favorite way to make steak in the house: broiling it!  Skirt steak is a nice lean cut of meat and is great served as a main dish or in tacos.  I've been on a horseradish kick recently so I made up this cool dipping sauce to compliment the meat. The marinade is basically things I had in the pantry and fridge.  I think you could get creative with your marinade (extra red wine from last night?) and it would still turn out wonderfully!

Ingredients:


-1 piece (package) skirt steak
-1/2 cup soy sauce
-2 Tbsp brown sugar
-juice of 1 lemon
-2 Tbsp olive oil
-3 cloves minced garlic (you can cheat and use jarred garlic)
-1 Tbsp ground ginger
-2 Tbsp Hoison sauce
-4 green onions, chopped
-3 Tbsp red wine vinegar
-3 Tbsp Worcestershire sauce
-1/2 bunch cilantro, roughly chopped

Horseradish Dipping Sauce Ingredients:


-1/2 cup light sour cream
-zest and juice from 1 lemon
-4 Tbsp fresh chives, snipped
-2-3 Tbsp horseradish (depending on how hot you like it)

Easy Roast Chicken


My mom's good friend brought this roast chicken to her when she had my little brother. Now, 18 years later, I made it for my best friend, Erica who just returned home after having her second baby girl, Claire Dyer!  I know roasting a whole chicken can sound intimidating...it did to me until my mom and I made this together the a few weeks ago.  The chicken was so juicy it tasted like butter (although I didn't add a drop of oil to the chicken)!  I also made 2 chickens at the ranch last weekend and used the bones to make a chicken stock...even easier than roasting the chicken!

Ingredients:


-1 whole chicken (roaster or fryer)
-2 whole lemons
-seasoning salt
-garlic salt
-paprika

Sea Scallops with White Wine Mushroom Sauce


This was one of the first recipes I learned to make and memorized.  It's from a circa-1980's Kansas City cookbook called Restaurant Secrets.  The recipe is from a local French restaurant called Tatsu's.  If you like scallops, this is an easy, decadent meal!.  Make sure to get the larger sea scallops, not the small bay ones.  My favorite place to get these are from Costco and come in a large frozen bag.

Ingredients:


-12 oz of sea scallops (or about 4 per person)
-salt and pepper to taste
-1/4 cup of flour
-2 Tbsp vegetable oil
-1 package (8 oz) sliced mushrooms
-Tbsp garlic powder
-2 Tbsp fresh lemon juice
-1 oz butter
-2 Tbsp white wine
