Cajun Roasted Red Potatoes

This is a great, easy side for many dinners, especially fish.  Any cajun or creole seasoning will work in this recipe.  I made this at my mom's house and she had Louisiana Cajun Seasoning.

Ingredients:

-Red Potatoes quartered or smaller (amount depends on how many people you're serving)
-2 Tbsp of olive oil
-1 Tbsp Cajun Seasoning Blend
-salt and pepper

Wash and quarter the red potatoes. You can cut them into eighths if you'd like.  Smaller pieces = quicker cooking time. Preheat the oven to 450 degrees.

Place the potatoes in a bowl and drizzle with olive oil.  Salt and pepper to taste and add the Cajun Seasoning blend.  Toss the potatoes until evenly coated with oil and seasonings.

Place the potatoes in a baking dish or rimmed baking sheet.

Bake the potatoes about 40 minutes until they are tender and can be easily pierced with a fork.  Stir every 15 minutes to make sure they cook evenly.

Serve hot as a wonderful side dish with a kick of flavor!
