Roasted Cauliflower with Garlic and Parmesan


I know there are lots of people who don't like cauliflower but I've had people tell me they like this better than my Roasted Broccoli Recipe.  If you want something new, this is a great side with steak or other red meat.  And it's definitely better for you than a twice baked potato! Also, if you're watching your wallet this is a cheap dish from Budget Bytes.

Ingredients:


-1 large head cauliflower
-2 Tbsp olive oil
-1/4 cup Parmesan Cheese (plus a few Tbsp more to sprinkle at the end)
-1/2 Tbsp minced garlic
-3-4 Tbsp chopped fresh parsley
-salt and pepper to taste




First, rinse your head of cauliflower and cut (or tear) into bite-sized pieces.  Place in a large bowl and set aside.  Also, now is a good time to preheat the oven to 400 degrees.



In a smaller bowl whisk together the olive oil, Parmesan cheese and minced garlic (I cheated and used jarred garlic). Pour over the cauliflower and toss until evenly coated.



Line a baking sheet with aluminum foil and spray with cooking spray.  Spread the cauliflower evenly on the baking sheet. Sprinkle with salt and pepper.



Pop in the oven for 45 minutes.  Using a spatula, turn the cauliflower about every 15 minutes so they brown evenly.


While the cauliflower is roasting, wash, dry and chop your parsley.


When the cauliflower is done roasting, sprinkle with 2-3 Tbsp additional Parmesan and the parsley. 



Serve warm!

  1. I love everything about cauliflower and I will be trying this recipe. Bet it would work with broccoli, brussels sprouts...yes?
