Maple Dijon Roasted Brussels Sprouts with Black Walnuts


This recipe takes my basic Roasted Brussels Sprouts recipe and kicks it up a notch.  Just a few more ingredients poured over the top and you have a pretty gourmet, fall, vegetable side dish.  Blake and I had it the other night with the Pork Tenderloin and both loved it! He said it may have been his favorite dinner yet :) The inspiration from this recipe came from Canadian food blog, Closet Cooking.

Ingredients:


-2 lbs. brussels sprouts
-2 Tbsp. olive oil (divided)
-salt and pepper to taste
-1 Tbsp. white wine vinegar
-1 Tbsp. maple syrup
-1 tsp dijon mustard
-1 Tbsp dried garlic
-1/4 cup walnuts (I used black walnuts)

Easy Broccoli and Ham Quiche


I'm not exactly a morning person so when I know I'm having house guests this is my go-to brunch recipe because I can make it a day or two in advance and just warm it up in the morning.  Perfect! I've made a few other versions of this quiche including "Spinach and Mushrooms with Goat Cheese" and "Ground Beef Mexican" (with jalapenos and green chilies, and corn!).  The sky is the limit.  It's actually a great way to get rid of leftovers.  Just use the same milk, mayo and egg mixture....and don't forget some sort of cheese! Also, the pie crusts usually come in two's so I often double the egg mixture and make 2 different versions. The following measurements are for 1 quiche.

Ingredients:


-1 frozen pie crust
-1 package of cubed ham (I like Hormel)
-1/2 bag of frozen broccoli florets, thawed (although I've thrown them in frozen before!)
-1 cup shredded Swiss cheese
-1 Tbsp garlic pepper (or garlic powder + pepper)
-1 tsp dry mustard
-1/2 cup milk
-1/2 cup light mayo
-4 eggs

Roasted Cauliflower with Garlic and Parmesan


I know there are lots of people who don't like cauliflower but I've had people tell me they like this better than my Roasted Broccoli Recipe.  If you want something new, this is a great side with steak or other red meat.  And it's definitely better for you than a twice baked potato! Also, if you're watching your wallet this is a cheap dish from Budget Bytes.

Ingredients:


-1 large head cauliflower
-2 Tbsp olive oil
-1/4 cup Parmesan Cheese (plus a few Tbsp more to sprinkle at the end)
-1/2 Tbsp minced garlic
-3-4 Tbsp chopped fresh parsley
-salt and pepper to taste

Rosemary Potato Cubes


I admit, I'm addicted to Pinterest. This is one of those recipes I stumbled upon during one of those late night "pinning crazes". It's from Delicious Days. I made it as a side dish with my Flank Steak and Horseradish Dipping Sauce.  I used the dipping sauce with these and it was fabulous!

Ingredients:


-6-10 waxy potatoes, like Yukon Golds
-3 Tbsp chopped fresh rosemary
-1 Tbsp sea salt
-pepper to taste
-olive oil
